Two new Michelin recommendations for Puerto
Michelin’s October update adds 20 restaurants to its Spanish selection, including both Taoro venues. LAVA receives a dedicated feature in the announcement, while OKA is listed among the month’s other additions. Both now have their own entries in the guide, marked “New”.
These are Michelin recommendations; this announcement does not award either restaurant a Michelin star. Stars and Bib Gourmands are announced separately at the guide’s annual ceremony.
LAVA: fire, smoke and seasonal produce
Erlantz Gorostiza leads LAVA’s creative direction, with Esteban Sánchez as resident chef. Cooking over flame and embers, together with smoking, shapes a menu built around seasonal ingredients.
Its two tasting menus, Picón and Malpaís, change with the produce available. Michelin highlights ingredients from the islands, including carabineros from La Santa and peppers from La Orotava. An open kitchen sits at the centre of the experience, with tables and a curved counter bringing diners close to the cooking.
OKA: Japanese cooking with an island connection
OKA by Ricardo Sanz takes a different approach, combining Japanese techniques with island produce. Emiliano Liska runs the kitchen day to day.
Michelin draws attention to the omakase counter, where diners can watch the chefs prepare and serve the food. Its listing describes both à la carte dining and a tasting menu, offering a choice between selecting individual dishes and following the kitchen’s sequence of courses.
A chef award in the same week
The Michelin news follows another recognition for Gorostiza. He was named Best Chef at the Culinary Hotel Awards 2026, held in Las Palmas de Gran Canaria on 19 October.
At Gran Hotel Taoro, Gorostiza also directs Amalur, the hotel’s bistro.
A year since the reopening
The additions arrive as Gran Hotel Taoro celebrates its first anniversary since reopening, following the restoration of the historic property. The hotel originally opened in 1890 and remains one of Puerto’s most recognisable hillside landmarks.
